Burnt Sugar Almonds (Gebrannte Mandeln)

  • 250ml water
  • 200g sugar
  • 1tsp vanilla extract
  • 1/2 tsp cinnamon
  • 200g almonds


  1. Mix sugar and cinnamon in a non stick frying pan.
  2. Add the water and vanilla extract, stir, turn on the hob and bring to boil.
  3. Add the almonds and stir continuously until all liquid has evaporated.
  4. Turn the hob down to medium heat.
  5. Either grease a baking tray, or better, use a non-stick reusable baking parchment.
  6. Spread the almonds onto the tray and separate them using a couple of forks.
