Squash and Apple Cake

Yields: 12 slices

Ingredients:

  • 1 small squash (~500 grams)
  • 100ml agave syrup
  • 2 eggs
  • 120ml sunflower oil
  • 300g flour
  • 1 finely grated tonka bean (or 1tsp vanilla essence)
  • 1tsp cinnamon
  • 2 level tsp (10g) baking powder
  • 1 level tsp (5g) soda
  • 3-4 apples

Directions:

  1. Grate or blend the squash.
  2. Separate the eggs and mix the yolks with the sugar, agave syrup, oil, tonka bean and cinnamon in a large bowl.
  3. Add the squash to the mix.
  4. Sift the flour, mix with the baking powder and soda and gradually add to the mix.
  5. Beat the egg whites stiff and gently fold into the mix.
  6. Preheat the oven to 150 degrees / gas mark 2.
  7. Pour the dough into an 11 inch spring form and top with the thinly sliced apples.
  8. Bake for about 1 hour until a toothpick comes out clean.
