Squash and Apple Cake
Yields: 12 slices
Ingredients:
- 1 small squash (~500 grams)
- 100ml agave syrup
- 2 eggs
- 120ml sunflower oil
- 300g flour
- 1 finely grated tonka bean (or 1tsp vanilla essence)
- 1tsp cinnamon
- 2 level tsp (10g) baking powder
- 1 level tsp (5g) soda
- 3-4 apples
Directions:
- Grate or blend the squash.
- Separate the eggs and mix the yolks with the sugar, agave syrup, oil, tonka bean and cinnamon in a large bowl.
- Add the squash to the mix.
- Sift the flour, mix with the baking powder and soda and gradually add to the mix.
- Beat the egg whites stiff and gently fold into the mix.
- Preheat the oven to 150 degrees / gas mark 2.
- Pour the dough into an 11 inch spring form and top with the thinly sliced apples.
- Bake for about 1 hour until a toothpick comes out clean.
