Currant Courgette Cake

  • 3 eggs
  • 300g courgette, grated
  • 150ml agave syrup
  • peel of 1 lemon
  • 6 tbsp (40g) oil
  • 300g flour
  • 1 tsp (7g) baking powder
  • 1 tsp (7g) soda
  • 200g currants (mixed)


  1. Preheat the oven to 175 degrees / gas mark 4.
  2. Sit the grated courgette in a bowl for about 10 minutes, then strain it, using a cheesecloth or similar.
  3. Separate the eggs and whisk the egg white until stiff. Set aside.
  4. Whisk the yolks in a large bowl and gradually add agave syrup, courgette, oil, lemon peel.
  5. Sift the flour, baking powder and soda and gradually add to the mix.
  6. Gently fold in the de-stalked currants and egg white.
  7. Grease an 11 inch springform and pour in the cake mix.
  8. Bake for about 1 hour, until a toothpick inserted comes out clean.
