Currant Courgette Cake
Yields: 12 slices
Ingredients:
- 3 eggs
- 300g courgette, grated
- 150ml agave syrup
- peel of 1 lemon
- 6 tbsp (40g) oil
- 300g flour
- 1 tsp (7g) baking powder
- 1 tsp (7g) soda
- 200g currants (mixed)
Directions:
- Preheat the oven to 175 degrees / gas mark 4.
- Sit the grated courgette in a bowl for about 10 minutes, then strain it, using a cheesecloth or similar.
- Separate the eggs and whisk the egg white until stiff. Set aside.
- Whisk the yolks in a large bowl and gradually add agave syrup, courgette, oil, lemon peel.
- Sift the flour, baking powder and soda and gradually add to the mix.
- Gently fold in the de-stalked currants and egg white.
- Grease an 11 inch springform and pour in the cake mix.
- Bake for about 1 hour, until a toothpick inserted comes out clean.
