Vegan Chocolate Muffins
Ingredients:
base:
- 150g white flour
- 150g spelt flour
- 200g sugar
- 1 tsp salt
- 2 heaped tsp baking powder
- 40g cocoa powder
- 2 tsp vanilla essence
- 500g vegetable oil
- 100g mixed chopped nuts
- 100g ground almonds
- 100g cacao nibs
- 225ml soya milk
icing:
- 100g margarine
- 30g cocoa powder
- 150g powdered sugar
- 2 tbsp water
- 2 tbsp flour
- 1tsp vanilla essence
Directions:
- Preheat the oven to 180 degrees / gas mark 4. Line a muffin tray with baking cups.
- Mix all dry ingredients in a bowl.
- Make a well in the centre, add the vanilla, oil and soya milk, and mix well.
- Pour into the baking cups, and bake in the preheated oven for 30 minutes, until a toothpick inserted in center comes out clean.
- Allow to cool completely.
- Cream the margarine in a small bowl then add the sugar, cocoa, vanilla, and enough water to make a thick but spreadable frosting.
