Vegan Chocolate Muffins

Yields: 12 large muffins

Ingredients:

    base:

    • 150g white flour
    • 150g spelt flour
    • 200g sugar
    • 1 tsp salt
    • 2 heaped tsp baking powder
    • 40g cocoa powder
    • 2 tsp vanilla essence
    • 500g vegetable oil
    • 100g mixed chopped nuts
    • 100g ground almonds
    • 100g cacao nibs
    • 225ml soya milk

    icing:

    • 100g margarine
    • 30g cocoa powder
    • 150g powdered sugar
    • 2 tbsp water
    • 2 tbsp flour
    • 1tsp vanilla essence

    Directions:

    1. Preheat the oven to 180 degrees / gas mark 4. Line a muffin tray with baking cups.
    2. Mix all dry ingredients in a bowl.
    3. Make a well in the centre, add the vanilla, oil and soya milk, and mix well.
    4. Pour into the baking cups, and bake in the preheated oven for 30 minutes, until a toothpick inserted in center comes out clean.
    5. Allow to cool completely.
    6. Cream the margarine in a small bowl then add the sugar, cocoa, vanilla, and enough water to make a thick but spreadable frosting.
