Mushroom apple stew

  • Onion- maybe 3
  • Portobello mushrooms- maybe 2
  • Fennel seeds
  • Oil for frying
  • Potatoes- about 6
  • Apple- about 3
  • Vege stock- enough to cover potatoes
  • Bay leaves
  • Sage


  1. Fry onions and mushrooms in oil, and throw in a pinch of fennel seeds
  2. Take off the heat and add in chopped up potato and apple, bayleaves and lots of sage and simmer in vege stock until potatoes are soft
  3. Thats it! The apples add a great flavour. I used eating apples that still had a bit of sour in them, I think its best with apples that are not too sweet.
