Mushroom apple stew
Ingredients:
- Onion- maybe 3
- Portobello mushrooms- maybe 2
- Fennel seeds
- Oil for frying
- Potatoes- about 6
- Apple- about 3
- Vege stock- enough to cover potatoes
- Bay leaves
- Sage
Directions:
- Fry onions and mushrooms in oil, and throw in a pinch of fennel seeds
- Take off the heat and add in chopped up potato and apple, bayleaves and lots of sage and simmer in vege stock until potatoes are soft
- Thats it! The apples add a great flavour. I used eating apples that still had a bit of sour in them, I think its best with apples that are not too sweet.
