Vegan Blackberry Cheesecake

Ingredients:

    Base:

    • 200g spelt flour
    • 150g sugar
    • 150g ground almonds
    • 3tsp (15g) baking powder
    • 175g oil
    • 1tsp vanilla extract
    • peel of 1/2 lemon
    • 500g blackberries

    Topping:

    • 150g cashew nuts
    • 100g macadamia nuts
    • 1tsp vanilla extract
    • peel of 1/2 lemon
    • juice of 1 lemon
    • 100g coconut oil
    • 75g agave syrup

    Directions:

      Base:

      1. preheat oven to 180 degrees / gas mark 4
      2. lightly grease an 11″ spring form
      3. mix all ingredients for the base (other than the blackberries) until you get a smooth (but crumbly) dough
      4. spread the dough in the spring form and spread the blackberries on top, slightly pushing them into the dough. keep a few berries for decorating the cake.
      5. bake for 40-50mins

      Topping:

      1. blend all remaining ingredients in a food processor until smooth
      2. spread on top of the cake
      3. decorate with the remaining blackberries
      4. chill
