Vegan Blackberry Cheesecake
Ingredients:
Base:
- 200g spelt flour
- 150g sugar
- 150g ground almonds
- 3tsp (15g) baking powder
- 175g oil
- 1tsp vanilla extract
- peel of 1/2 lemon
- 500g blackberries
Topping:
- 150g cashew nuts
- 100g macadamia nuts
- 1tsp vanilla extract
- peel of 1/2 lemon
- juice of 1 lemon
- 100g coconut oil
- 75g agave syrup
Directions:
Base:
- preheat oven to 180 degrees / gas mark 4
- lightly grease an 11″ spring form
- mix all ingredients for the base (other than the blackberries) until you get a smooth (but crumbly) dough
- spread the dough in the spring form and spread the blackberries on top, slightly pushing them into the dough. keep a few berries for decorating the cake.
- bake for 40-50mins
Topping:
- blend all remaining ingredients in a food processor until smooth
- spread on top of the cake
- decorate with the remaining blackberries
- chill
