Vegan Strawberry Flan

Yields: 12 slices

Ingredients:

  • 175g sugar
  • 250ml soya or nut milk
  • 6 tablespoons vegetable oil
  • 4 teaspoons baking powder
  • 1 teaspoon vanilla essence
  • 250g flour
  • 1 packet vege-gel
  • 500g strawberries

Directions:

  1. Grease a 28 cm / 11 inch springform and preheat the oven to 180 degrees / gas mark 4.
  2. Using a hand mixer, mix all ingredients in a bowl until smooth and foamy.
  3. Fill into the springform and bake for 20-25 minutes, until a toothpick inserted into the centre comes out clean.
  4. Allow to cool.
  5. Prepare the jelly according to packet instructions.
  6. Cut strawberries in half and arrange on the flan base.
  7. Pour jelly over the strawberries and allow to cool.
