Nut Milk

Yields: between 500 and 750ml

Ingredients:

  • 100g nuts (hazelnut, cashews or almonds work well)
  • pinch salt
  • vanilla essence to taste (optional)

Directions:

  1. soak the nuts in water overnight
  2. rinse and put in blender
  3. add salt and vanilla essence
  4. slowly add 1 pint of water, starting the blender once the nuts are covered
  5. strain through a cheesecloth or muslin bag
  6. optional: put the pulp back to the blender and add 1/2 pint of water (makes slightly thinner milk)

Notes:
The pulp can be either dried (make sure you dry it well, or it will get mouldy) or refrigerated for later use.
